This clip here shows a booth girl demonstrating how Pac-Man is to be controlled via Kinect, and it does look like you're gonna need some major arm control and power to steer him clear of the ghosts' path.
The game's title did say "Answer With Your Body" after all. New Brain Training: Answer With Your Body releases in Japan on November 20, 2010.
