The Bitbag dug a little deeper into this matter and actually emailed Pete Hines, Bethesda's VP, to clarify the matter. Here's his sent email, as well as Pete's reply, verbatim.

Hello Pete! IÂ’m aware of the patch thatÂ’s being released for the 360 and PC versions of Fallout 3. This patch allows you to go back and complete unfinished missions after beating the game. I realize that if there is going to be some sort of DLC for the PS3 that youÂ’d want to keep it under wraps. It is important however, to inform the masses if you plan on patching the game for the Playstation 3. Playstation 3 owners are very disappointed that they have no way of going back to finish all of those side missions.
Could you please provide a glimmer of hope that there will be a patch for the Playstation 3 version of Fallout 3? Playstation fans that supported Bethesda by purchasing this game deserve to know.

That is incorrect. There is no patch or update, nor will there be, that removes the ending of the game. Not on Xbox 360, PS3, nor PC.
One of the DLCs we are doing for 360 and PC will include this functionality.
It is important to note that it is available only as part of that DLC. You canÂ’t get it any other way and it is not a change we are planning to make to the game as it was released to any platform.
Hope that helps clear up some misconceptions.

I don't know about you guys, but that kinda sounds like a cop-out to me. Sorta like getting told that nobody's having cake for dinner, but your two other siblings can have cake for dessert. Be it in DLC form or not, fact remains that Xbox 360 and PC players will still have an opportunity to have Post-Ending Play. And PS3 players do not.
This news doesn't really make it any better, huh?

Didn't Bethesda once say that they wanted each iteration of the game to give the same experience, regardless of console? This sure doesn't seem fair to me.
They are releasing DLC for some platforms, but for people who have completed the game already it will let them go back in to use the DLC.
That's how I read it as well. In order for people that have already finished the game to have the ability to access the DLC, then of course they will have to be able to play on after the credits. The DLC is from what i've read new areas, and if you can't play after the credits, you can't access those areas....so it's a must really. Of course you probably don't have to go to the DLC areas right away, and can than explore whatever you missed before you finished the game. I guess this could come to the PS3 if sometime in the future Bethesda is able to release the DLC on PS3....but I am guessing that is only if MS paid for timed exclusivity.
It could be that when you load the dlc you start out at a completely new area and the normal game areas are not accessible at all. Seems stupid I know but just a thought.
I'm pretty sure when you do the final mission Take it Back!, the character you talk to for the quest tells you "there is no coming back", and to finish your other business beforehand. If you didn't make a save right there that's your own fault. On the PC this isn't a problem, since mods let you continue playing after the end sequence, but it says in the game you can't come back after completing this quest. Even if you don't heed the warning and make a save right before doing the final quest, you should at least have another save to fall back on. If you don't have that you're just downright stupid... Always, always have multiple saves in an RPG! It's like a rule
if Im wrong about the game notifying you that you cannot come back, which I may be Im not 100% sure on it but i am like 90%, you'd still be stupid for not having multiple saves in an RPG...
This isn't like HL2 on PS3, which took so long to release and gets no support because Valve did not make it, they outsourced it to EA because they don't do PS3 games themselves. Bethesda made Fallout 3 for PS3 in-house, and immediately struck a deal with MS for LIVE exclusivity on the DLC. I guess with Beth it's more like "each iteration of the game will give the same experience, regardless of console... eventually"
